I love quinoa. It is a fantastic source of iron and magnesium. As it had to be a fast dinner, I made one of my favourite one-pot recipes. I sauted some spring onions and mushrooms in coconut oil (the original recipe takes tofu instead of mushrooms, but I do not like it). Then you add 120ml of vegetable broth, some zucchini and 100g quinoa as well as 200ml coconut milk. Let it cook for 20minutes. After 15 minutes you add the frozen peas. Spice it up with salt, pepper and lemon juice.
